IL POLLO D’ORO WAS OPENED BY MY FATHER, MAURO PARENTI, IN 1962 IN PISTOIA.
AT THAT TIME HE ALREADY OWNED ANOTHER SIMILAR RESTAURANT IN VIAREGGIO ,ON THE TUSCAN COAST .
HE WAS THE FIRST IN PISTOIA TO USE A SPECIAL MACHINE (MADE IN ENGLAND) THAT”TANNED” CHICKENS WITH UVA LAMPS:
WITH THIS HE PROVIDED THE HABITANTS OF PISTOIA WITH “GOLDEN CHICKENS”.
IN 1964 HE STARTED THE PIZZA PRODUCTION AND NOT JUST FOR TAKE AWAY, SOME SEATS WERE AVAILABLE ON THE MAIN ENTRANCE HALL.
IN THE LATE 60’S A NEW ROOM WAS OPENED IN THE BASEMENT:
SAINT JAMES’ TAVERN, NAMED AFTER THE NAME OF THE SAINT PATRON OF PISTOIA.
MORE SEATED PLACES ARE SINCE NOW ON IN THE PIZZERIA ‘IL POLLO D ‘ORO’ (THAT MEANS IN ENGLISH LANGUAGE GOLDEN CHICKEN).

AFTER A FEW YEARS AND MANY UNUSUAL REQUESTS FROM HIS CLIENTS, MY FATHER CREATED A BIG, NEW VERSION OF PIZZA:PANE ARABO.

THIS SPECIAL AND ORIGINAL RECEIPE INCLUDES MORE THAN 20 INGREDIENTS AND THE PIZZA TASTES GREAT ! MANY PEOPLE COME FROM OTHER PARTS OF TUSCANY TO TRY THIS SPECIALITY.

MANY THINGS HAVE CHANGED SINCE MY FATEHR’S TIMES :THE PREMISES HAVE BEEN RENEWED IN 1990.
IN 2001 ANOTHER ROOM WAS ADDED TO THE OTHERS ON THE GROUND FLOOR OFFERING A MORE COMFORTABLE DINING AREA WITH AIR CONDITIONING.

THE WOOD FIRE OVEN, KITCHEN AND SERVICES HAVE BEEN COMPLETLY RENEWED, WITH THE INCLUSION OF A LAVATORY FOR DISABLED ON THE FIRST FLOOR.

NOWADAYS OUR PRODUCTION INCLUDES NOT ONLY PIZZA (MADE WITH THE BEST INGREDIENTS SUCH AS: MANITOBA FLOUR, TUSCAN EXTRA VIRGIN OLIVE OIL, FRESH BUFFALO OR FIOR DI LATTE (COW) MOZZARELLA, TOMOTOES FROM NAPLES) , PANE ARABO AND CHICKEN,OF COURSE!, BUT ALSO PASTA DISHES, MEAT COURSES, BIG SALADS AND SOME HOME MADE DESSERTS.

AFTER MORE THAN 40 YEARS OF QUALITY AND PROFESSIONAL ACTIVITY TODAY I AM PROUD TO SAY THAT A LOT OF MY CLIENTS ARE THE SONS’OF MY FATHER’S CLIENTS AND THIS MEANS A LOT TO ME..
